Low Carb Vegetarian Cabbage Rolls

I apologize for the wonky, half guessed at, amounts. I don't measure this stuff, ever, I just sort of do it and taste as I go. Pinto beans (I buy organic dried, soak them 8-10 hours, and cook them in water, onion, and soy sauce slowly for about 4 hours. I think I have around 4-6 cups once cooked.
This first recipe are simply the Vegetarian Cabbage Rolls
I've made for years. Make the changes to the right ------------------------->
and they are now low carb and still yummy.

Boil a head of cabbage in a large pot until the outer leaves are soft and bendable

Filling

1 cup organic brown rice,  1 cup beans of your choice

1 organic egg

1 chopped onion

"Beef" flavored vegetarian bullion or soy sauce

Garlic, parsley, and a bit of chili powder

Organic ketchup (1/2cup?)

You can add very finely chopped carrots, celery, bell peppers, etc if you like 'em.

Mix beans, uncooked rice, eggs, onions, spices, soy sauce, and ketchup.

Boil a large pot of water, cook cabbage leaves until soften enough to wrap around bean and rice mix. Rinse leaves in cool water. Wrap spoonfuls of bean/rice mix in leaves.

Sauce

1 large can of tomato juice

3-5 tablespoons of fresh lemon juice

1/4 cup+ of organic dark brown cane sugar

Soy sauce

Onion powder

Fresh ground pepper, sea salt

2-4 tablespoons of chili powder
(Somehow this does not end up tasting like chili, but the spice does seem to heighten the flavors of the rest of it and adds a bit of zestiness to the dish.)

Peel cabbage leaves off carefully and fill each with the bean/rice stuffing. Place them carefully in a large flat baking dish.

Pour the sauce over the cabbage bundles, cover and cook 325 F for a couple of hours. Check the liquid levels periodically and add water as needed to keep the sauce the thickness you enjoy.

One of my favorite dishes ever. I never, ever liked meat cabbage rolls even in my meat eating days. This one I like and this one is always a hit at gatherings and dinners.







Low Carb Vegetarian Cabbage Rolls

Use mashed lupini beans and/or mashed black soy beans for the stuffing and exchange the rice for finely chopped onions, carrots, broccoli, tofu or tempe, green beans, etc.

Use tomato sauce instead of ketchup in the stuffing.

Instead of tomato juice for the sauce, use tomato sauce and water, use stevia for the sweetener.

An entire  pan of this stuff has about 50-60 carbs. That fed 4 adults (2 of them large men) for 2 meals. Total carbs per person... less than 8 carbs per meal. And that meal is filled with protein, vitamins, minerals, and is high in fiber! And did I mention it tastes awesome?

Darn, this dieting stuff is tough. :D
